Low Fat Zucchini Bread

Ingredients

  • 1 1/2 cups whole wheat flour
  • 2 tbsp stevia, or any low calorie sweetener
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1/2 cup chopped walnuts
  • 1 egg
  • 2 egg whites
  • 2 1/2 cup zucchini, finely grated
  • 1/4 cup olive oil
  • 1 tbsp vanilla extract

Directions

  1. Preheat oven to 350F.
  2. Spray two 8×4 inch loaf pans with non stick cooking spray.
  3. Beat eggs, oil, vanilla, and stevia together in a large bowl.
  4. Add dry ingredients to the creamed mixture, beat well.
  5. Stir in zucchini and nuts until well combined.
  6. Pour batter into prepared pans.
  7. Pour mixture into muffin pan and cook for 40-45 min until toothpick comes out clean.
