Fiesta Chickpea ‘n’ Blackbean Salad

Ingredients

  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • pinch red pepper flakes
  • salt and pepper
  • 15 oz can black beans, drained
  • 1 cup canned chickpeas, drained
  • 1 cup grape tomatoes, halved
  • 1/3 cup red onions, minced
  • 1/3 cup cilantro, chopped
  • 1 ripe medium avocado, diced

Directions

  1. In a large bowl, combine the garlic, lemon juice, oil, crushed red pepper, salt and pepper.
  2. Add the black beans, chickpeas, tomato, onion and cilantro, mix well. When ready to eat, gently mix in avocado and serve right away or squeeze lemon juice on avocados to prevent them from browning.
